Blueberry Martini Jello Shots


1 1/4 cups of Stoli Blueberry vodka
4 tablespoons of simple syrup (add more if blueberries are sour)
3½  packets of 7 oz gelatin powder
About 60 fresh blueberries (more if the blueberries are small)


Combine the vodka and the simple syrup in a saucepan over a low heat.  gradually stir in the gelatin powder.  Gently heat the mixture for 5 minutes then take the saucepan off the stove, and let it cool slightly.  Take an ice cube tray and add some blueberries to each cube.  Then pour the mixture from the saucepan into each cube but only fill about 3/4 to the top.  Refrigerate for at least 4 hours or overnight until the gelatin has set.

Remove the cubes from the tray by gently easing them out with a knife.  Serve them on a chilled plate.

You can make simple syrup by mixing 2 parts sugar to 1 part water.  Bring the water to the boil in a saucepan then stir in the sugar.  Mix until dissolved and then cool before storing or using.
