This is a great recipe for a hot summer’s day. The ice is refreshing and the rum gives it a bit of a kick. You will need a blender to crush the ice, or you can use a stick blender. If you are a really keen drink maker you might have an electric ice crusher which would also work well.
As with any drink recipe it pays to experiment a bit depending on your taste and use the recipe below as a guide. You could add more or less rum, and even add a squeeze of fresh lemon juice to give it some extra tang. This recipe uses frozen lemonade concentrate which is available from Walmart.
6 Oz can of frozen lemonade concentrate
6 cups crushed ice
Approx ½ cup of coconut rum – add more or less according to your taste
Lemon juice – optional if you like some extra tang
Place ingredients in a blender and blend until it has a slushy consistency – don’t blend it too long or it will become to runny.
Garnish with a lime wedge
