Eating paleo isn’t hard once you get into the groove, but there are some things that might seem a little difficult. Like what do you do if you want a quick and easy smoothie for breakfast? You wouldn’t want to use cows’ milk as cave men didn’t milk cows. You wouldn’t want soy milk as soy beans are legumes so generally avoided as part of a paleo diet. So what about almond milk? Well, cavemen did eat nuts and drank water and that’s basically what good almond milk is made of; water and almonds. You might want to carefully check the ingredients in your almond milk though – some are sweetened and others contain additives. Go for an organic almond milk that is as natural as possible.
So, we’re settled on almond milk as the liquid part of the smoothie. Now how do we make it thick and creamy and try and add some protein. Bananas are ideal for thickening a smoothie, giving it some creaminess and some sweetness. They are ok in moderation on a paleo diet so we’ll use a banana. Next, to add some protein you can use some nuts. If you want to go for a really creamy finish you could add macadamias but the recipe here uses walnuts. This recipe uses strawberries but if you have some frozen blueberries you can substitute these. Finally, raw honey is permitted as part of a paleo diet so if your banana isn’t that ripe and you want your smoothie to be a bit sweeter then add some raw honey according to your taste.
1 medium banana – ripe
Quarter of a cup of walnuts, crushed to a meal (use almond meal if you haven’t got a grinder that can crush nuts)
1 cup of organic unsweetened almond milk
A handful of strawberries, or blueberries if you prefer
Raw Honey – optional
A few ice cubes
This part’s pretty easy, put the lot in a good quality blender and blend until smooth. You can check the thickness when you’re finished and add some more almond milk if it’s too think.
So there you have it, a breakfast smoothie that’s paleo, easy and delicious.
