Upside down pineapple cake jello shots

We all love the classic pineapple upside down cake so why not try this take of a dessert-worthy jello shot!


1 cup canned pineapple juice
1 tablespoon sugar (optional)
1.5 packets Knox unflavored gelatin
1 cup cake flavored vodka (or whipped vodka or vanilla)
Maraschino cherries


1. Pour pineapple juice and sugar in a small sauce pan and put gelatin over it. Allow to soak in for one or two minutes. And then heat over medium heat until gelatin dissolves, keep on stirring. Move away from heat. Stir in vodka.
2. Pour into plastic shot glasses, filling 3/4 of the way full, keep some of the jello mixture at room temperature. Put the plastic shot glasses in refrigerator for 45 minutes or so, or until just firm to the touch.
3. Cut small rings from pineapple, put in a bowl with a tablespoon of water. Cover and microwave on high heat for 3-4 minutes or until pineapple is hot and steaming.
4. When jello starts to set, put cooled pineapple ring and a maraschino cherry over it, and put a little more of the jello mixture on top. Refrigerate for at least 4 hours or overnight.
